Roasted Eggplant

I modified the following recipe:

Cut the eggplant (reference above link for how to cut the eggplant).  I seasoned with a little sea salt, black pepper, Mrs. Dash, a little Parmesan.

Spray a cookie sheet with non-stick spray and place the eggplant flat.  Bake 10 minutes at 450 degrees.  Flip eggplant and bake for an additional 5 minutes.  Enjoy!

    Hey Jen, I have been following your success! So proud of you. I have been cooking all your recipes for my family and we all love them. Proud to help them love veggies, I hated them as a child.
