Super Easy Vegetable Soup

  • 2 bags of Birdseye Frozen Soup Vegetables
  • 2.5 cups of low sodium V8
  • approximately 2.5 cups of water
  • 1 tsp of sodium free chicken bullion
  • Mrs. Dash Onion and Herb seasoning
  • Black Pepper

Combine all ingredients in a pot and bring to a boil. Reduce heat, cover and simmer for 1 hour. I splash in some Frank’s hot sauce when served.

This makes close to five 2 cup servings and was perfect for warm lunches this week! I could have (should have) stopped at half a bowl as I am overly full right now. Dang you warm delicious soup!

I was able to know the nutritional value in my soup by using a cool new site and app that I found. It is called Slim Kicker. You can track your food and exercise, but two cool features that I have not found with other sites are the Challenges and Reward section. You can set up a reward for yourself and when you want to give it to yourself based on the level you are at. This site tracks you progress advancing you through levels for tracking your food, exercise and for completing challenges. I am really digging this site and the free iPhone app they have. It is easy to add foods if they are not listed and create your own recipes.

If you are looking for some fun way to track your progress and keep yourself accountable, I would recommend this site and app. I love that they encourage a reward because we should periodically reward ourselves for making healthy choices!
