Zucchini Stew…Yummm!

Checkout what I made today! During one of the brief moments where Tink actually let me put her down today, I was able to make this delicious zucchini stew!

If made with meatless crumbles, a 2 cup serving is 202 calories and 4g of fat. If made with ground beef, a 2 cup serving is 378 calories and 19g of fat. This is a hearty and filling dinner with zero guilt!

1 bag of meatless crumbles or 4 cups of browned ground beef.
1.5 cups of diced onion
1.5 cups of diced green bell pepper
2 cups of chopped celery
6 cups of sliced zucchini (about 3 or 4 medium zucchini)
2 cans of diced tomatoes (I use no salt added)
1 cup of tomato juice (I used low sodium V8)
Italian Seasoning to taste (I used Mrs. Dash…again no salt)
Garlic Powder to taste
Black Pepper
Salt to taste ( I do add some sea salt at the end, but this way I have more control on the sodium level)

Sauté onions, green peppers, and celery until almost tender. (I throw in some italian seasoning at this point) Add in meatless crumbles or ground beef/turkey and zucchini and sauté a bit longer. Add tomatoes, juice, and seasoning and stir. Cook covered on low heat for 1.5 to 2 hours.

You can serve with mozzarella and/or Parmesan cheese. We served ours with a little mozzarella and it was amazing!

Warm and super filling dinner for 282 calories and 9g of fat (including the cheese). Not too shabby!

    Looks good! I had a zucchini from my neighbors and didn’t know what to do with it. I ended up making a zucchini bread. Will definitely try something like this next time!
