Sweet Potato Hash Browns

face 024Ingredients (amounts listed are what I used to feed me, the hubs and Tink as a side dish.)

Sweet potatoes peeled (1 large potato)
Bell pepper (1/4 pepper)
Onion (1/4)
Salt
Olive Oil or non stick spray

face 021Shred potatoes (I used the shred feature on my food processor and this took seconds).  Mix potato, sliced bell peppers, onions and salt.  Pour oil on griddle* or spray with cooking spray.  Pour out the mixture and spread out to create a thin layer.  Place a cake pan on top to create a weight.  This helps with the crispiness, plus helps to cook the potatoes faster.  Cook for 7 minutes.  Then stir/flip the hash browns, and place the cake pan back on top.  Cook for another 5 to 7 minutes.

*I used an electric griddle, but a stove top griddle will work as well as a skillet (just won’t get as crispy in a skillet).

2 servings: 108 calories, 1 gram of fat, 25 carbs, 4 g of fiber, and 3g of protein per serving.

Sweet potato fact: Sweet potatoes are not healthier for you than white/red potatoes, in respect to calories and fat.  However, sweet potatoes have a more gradual effect your blood sugar than white/red varieties.  The reason the blood sugar effect is important, is because when our blood sugar suddenly spikes, there is an inevitable crash.  Our bodies respond to that crash with feelings of hunger.  These fluctuations can lead to overeating.

    I make something similar but with Yukon potatoes and kielbasa sausage (fit and active brand). It is a great meal but I like the idea of shredded sweet potatoes. This is on my next weeks meal plan.
