Unlikely Comfort Food

1 Oct

Believe it or not today’s lunch is a comfort food for me. My mom used to make a huge bowl of broccoli and cauliflower with Italian dressing when I was growing up. Over the years, pasta was added, but the classic is still a favorite of mine!

I could eat my weight in this concoction. Thankful for lunch rations to keep me I’m check!

Looks so good. I love cauliflower so much. so so much… I toss it with some extra virgin olive oil, a little salt and pepper, some parmesean cheese and bake it – best.stuff.ever. Happy Monday girl.

I too love a huge bowl of steamed veggies, my Mom used to always make that for us growing up! Some kids these days would run screaming!

I agree completely! I really think exposure is key to kids. My kiddo eats most veggies extremely well. I think it is because I give them to regularly.

    This is an awesome post!

Eating a ton of veggies will definitely keep you healthy during the winter months! Also you can eat as much as you want and still keep off the pounds! Will have to try this one!
